For the cookies:
- 300g all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup granulated sugar
- 1 tsp orange extract
- 250g unsalted butter at room temperature
- 1 large egg
For the orange glaze:
- 130g cup icing sugar
- 1 tsp orange extract
- 2 tbsp water
- 1 cup chopped pistachios
Method:
- Preheat the oven to 180 degrees Celsius. Line baking tray with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In the bowl with a hand mixer or a bowl of a stand mixer, beat butter and sugar mixture together for several minutes until fluffy and pale.
- Beat in egg and orange extract. Mix until smooth.
- Gradually add in the flour mixture on low speed until blended.
- Using a tablespoon, spoon the dough and place it on your prepared baking trays, spacing a few centimetres apart. Gently flatten dough with the palm of your hand. Bake for 12-14 minutes or until cookies is just set and slightly golden brown. Cool cookies on baking trays for 2 minutes and transfer to cooling racks. Cool completely.
- In a bowl, whisk together icing sugar, water, orange extract. Dip each cookie top into the orange glaze.
- Sprinkle pistachios on top of each cookie. Let cookies sit until the glaze has set.
