Orange pistachio cookies

For the cookies:

  • 300g all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 1 tsp orange extract
  • 250g unsalted butter at room temperature
  • 1 large egg

For the orange glaze:

  • 130g cup icing sugar
  • 1 tsp orange extract
  • 2 tbsp water
  • 1 cup chopped pistachios


  1. Preheat the oven to 180 degrees Celsius. Line baking tray with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. 
  3. In the bowl with a hand mixer or a bowl of a stand mixer, beat butter and sugar mixture together for several minutes until fluffy and pale.
  4. Beat in egg and orange extract. Mix until smooth.
  5. Gradually add in the flour mixture on low speed until blended.
  6. Using a tablespoon, spoon the dough and place it on your prepared baking trays, spacing a few centimetres apart. Gently flatten dough with the palm of your hand. Bake for 12-14 minutes or until cookies is just set and slightly golden brown. Cool cookies on baking trays for 2 minutes and transfer to cooling racks. Cool completely.
  7. In a bowl, whisk together icing sugar, water, orange extract. Dip each cookie top into the orange glaze. 
  8. Sprinkle pistachios on top of each cookie. Let cookies sit until the glaze has set.
